Ingredients:
3 eggs
1 tbspn of olive oil
2-3 slices of deli turkey
1/4 cup of baby spinach
2 tbspn of Monterey Jack cheese,
2 tbspn of Mexican blend cheese.
Gruyere cheese and bacon bits for garnishing
Directions:
In a small bowl, whisk the eggs (you can sprinkle with a little pepper and salt). In a medium skillet place the oil under medium heat. Once skillet is hot pour in the eggs. Watch the eggs until they start to get firm around the edges (1-2 minutes), then start to pull pieces of the turkey and placing in the center of the egg mixture.
Then add the spinach and cheese. Take your spatula and place it under one end of the firmed egg mixture and flip it over halfway so that it makes a half moon. Sprinkle the Gruyere cheese on top and place a cover on top of the skillet. This is to aid in melting the cheese. Remove the cover once cheese is melted, take the spatula and remove the omelette from the skillet on to the plate. Sprinkle with bacon bits.
