Ingredients:
4-5 salmon fillets
1/4 cup of brown sugar
2 tbspns of dijon mustard (or spicy brown mustard)
1 tspn of gingerbread spice
1 lime (for zest and garnish)
Salt, pepper & cayenne pepper for taste.
Directions:
Preheat oven to 400 degrees
Mix the 1/4 brown sugar, 1 tspn gingerbread spice, 2 tbspns of Dijon mustard together with a whisk (or a fork) and add lime zest.
Sprinkle salt, pepper & dash of cayenne pepper (if you don’t like spicy- nix this part)
Spray baking rack with cooking spray (or baking sheet)
Lay fillets on the baking rack, spoon mixture onto fillets or if you have a pastry brush - use that.
Put in oven for 10 min, then turn your oven to broil for an additional 5- 10 minutes carefully watching for caramelization.

Sides: I chose a bed of mixed greens that was sprayed with balsamic vinaigrette, however mashed potatoes or roasted asparagus will also work well!
