Ingredients:
2 lbs ground beef
1 stick of pepperoni (sliced and then the slices, cut in half)
6-8 large tortillas
1-2 pckgs of Uncle Ben's Ready Rice
1 1/2 taco seasoning packets
1 Goya Sazon packet
1 -2 cups mozzarella cheese
1-2 cups cheddar cheese
1 lime
Directions:
Preheat Oven 300 degrees
In a large skillet, brown the ground beef- follow the directions for the taco seasoning packet. Add the pepperoni and Sazon seasoning packet. Squeeze juice from lime and then let simmer for 5-10 min remove from heat.
Wrap the tortillas in aluminium foil, place on a baking sheet and put in the oven for 5 minutes
Prepare the ready rice (90 seconds)
Remove a tortilla from the foil, place rice, meat mixture and a hand full of mozzarella cheese down the center of the tortilla. Take the end of the tortilla and roll forward over the filling to make the burrito. Place on lined baking sheet. Repeat for additional burritos.
Spoon the meat mixture over the top of the burritos, then sprinkle a hand full of cheddar cheese.
Place the burritos in the oven for 30-45 seconds or until cheese is melted.
Remove, plate and enjoy!
Notes: For a dip, you can try a spicy queso sauce, or I used Herdez Guacamole Salsa
